Prepare a 50ppm ( parts per million ) chlorine solution using clean water and chlorine bleach. Using a one gallon container, add 1/2 to 3/4 teaspoon of Bleach and mix thoroughly.
Chlorine is extremely corrosive to stainless ( and other ) steels. Use of too much chlorine in the sanitizing solution will cause surface rust and pitting of the stainless steel reservoir and other cooler components. Never use a solution of over 50ppm.
If the unit is equipped with a hot tank, plug the tank inlet with a small tapered cork to keep sanitizer from entering the heater tank assembly. The high temperature within the heater tank will kill most bacteria, making the addition of sanitizer to the area unnecessary. Since sanitizers are especially corrosive at the high temperatures within the heater tank it is good practice to keep these solutions from entering the tank.
Allow the faucet(s) and water baffle to soak in sanitizing solution for five to thirty minutes.
Soaking components in bleach for extended periods of time may stain or damage plastic parts. Once components that touch the water have been sanitized, they should not be handled again with bare hands - use sanitary gloves. If gloves are re-used , re-sanitize them prior to each use by dipping the outside of the glove into the sanitizer.
Using a small hand-held spray bottle, spray a fine mist of sanitizing solution on the inside surface of the cold water reservoir. Keep the spray as fine as possible to prevent excess solution from puddling on the bottom of the reservoir, which could cause corrosion or taste problem. If a cork is installed, remove cork. Reinstall the water baffle and allow to air dry (Hand-wiping, even with a clean towel, can re-contaminate the reservoir). Cover the reservoir with a sanitary food grade lint-free tissue to protect from dirt and other contamination, and reassemble the cooler.
